Honey Sweetened Black Cherry Preserves

  • 8 cups black cherries pitted – you can also use frozen cherries if you do not have fresh
  • 1/4 cup water – if you use frozen, do not add additional water
  • Juice of one large lemon (1/4 cup)
  • 3/4 cup honey – raw or otherwise, it’s all good
  • 2 tsp almond extract – this really takes the cherry flavor to new limits

 

Cooking

  • Put cherries and water in a heavy pot and heat to a simmer. Using a masher or large spoon to mash the cherries while they are simmering for approximately 15 minutes, you can use kitchen scissors also to cut them in half while they are simmering
  • Add lemon juice, honey and almond extract, bringing to a rapid boil until thick. Takes about twenty to twenty five minutes. Stir consistently to avoid sticking. The preserves will thicken. Place in 4 oz Ball jars and then put the lids and rings on your jars, place in water bath to can. Makes about seven 4 oz  Ball  jars.
